While I'm definitely very happy about having a four day weekend, I'm definitely most grateful to the service of others who have fought and died for our country and freedom. But not just for those in the military. But for the police officers and firemen, and for all of the men and women who have volunteered to do the tough stuff to support and serve our communities. And to their loved ones who supported them and made their own personal sacrifices. Thank you.
That said, we're are enjoying the long weekend so far. Last night we went to Ryan and Angie's for burgers and a campfire. Of course, we had a great time. And tonight we are going to Mark and Linda's for snacks and cards after Anya goes to sleep. Then we'll have Sunday and Monday together! After coming off of Nathan's two to ten week... we could use this time together.
There's another blog I follow of a woman who also has PCOS. That's not what her blog is about but she often touches on it. Well... she recently made a post about eggs. And I could relate 100%. With PCOS, low carb/sugar, high protein is the goal. So I started eating eggs for breakfast a couple weeks ago ... usually scrambled, sometimes 'dippy.' And I found that it really makes a big difference in my morning. She also made a comment about organic eggs. There are two organic products that I cannot live without, milk and eggs. I don't always buy organic milk because it is expensive, but usually the first two gallons in a month are organic. It just depends on how our grocery budget it. And as for eggs, I buy organic, vegetarian fed, free range eggs. I cannot seem to find any local organic farmers like there are in BG, so I have to settle for whatever Meijer has. Well it turns out Ryan and Angie started a really nice garden and will have an abundance of veggies they said they'd share with us!!! Yay!!! And the best part... they're going to get chickens for eggs!!!!! I was so excited. I think we're going to offer to buy a chicken or two. I mean they said they'd share their eggs, but the feed isn't cheap and there's work involved. So I figured we'd just offer to buy a hen or two. I'm just so excited.
I've also been having some issues with meat lately. I don't think God intended for man to eat animal or for other animals to eat other animals. Call it the food chain, fine. Its just not been sitting well with me lately. I'm not going vegetarian, but we're definitely going to start getting our primary protein source from other areas like beans. But that's just me.
